Cô Út — "Auntie Út" — spent years cooking for her family and neighborhood before bringing those recipes to a small storefront on Elizabeth Street in Nolita. The sandwich counter is narrow. The lines move fast. Everything is made the way she was taught, and nothing is rushed.
We source our baguettes from a local bakery that bakes twice daily. Our pickles are in a jar on the counter, not a factory. The broth simmers from early morning until it runs out. If you've never had Vietnamese food made by someone who treats it like home cooking, this is the place to start.
We're not trying to be everything to everyone. We're trying to get the bread right, get the broth right, and treat the people who walk in like they've been coming here for years.
